It’s that time of the week again! Clear away those Monday blues and make your self a delicious desert courtesy of Blondilox. This porridge making wiz kid is here to show you how to make a a simple, healthy, warming and yummy desert. It’s perfect for an after dinner treat, an on the go breakfast or quick and easy snack. Strawberry, Blueberry & Coconut Porridge Oat Bake
Measurements are based on a small ramekin dish that I used so just adjust measurements to the size of your bowl!
Ingredients
Berries – I used a handful of blueberries and a handful of strawberries
Oats – Half a small cup full of oats
Seeds – I added a small handful of pumpkin and sunflower seeds to the oat mix for some extra crunch and goodness (any seeds will be fab and this is totally optional)
Coconut flakes – 2 heaped teaspoons (depending on how coconutty you want it)
Maple syrup – 1 tablespoon (or any sweeteners you want to add or that you have in your house)
Coconut oil – 1 tablespoon
Cinnamon – 2 teaspoons
How to make
Get a pan, pop the fruit in with the first teaspoon of coconut flakes, the first teaspoon of cinnamon and then cover the bottom of the pan with water and simmer for about 10mins.
In a separate pan add the coconut oil, maple syrup, the second teaspoon of coconut flakes along with the second teaspoon of cinnamon and melt altogether to form mix.Then take it off the heat and add in the oat mix to the pan.
Put the fruit layer at bottom of the baking dish then pop the oat mix on top. Put into the oven at 180 degrees and bake for around 20mins!
Simply enjoy there and then or transfer into the fridge once it’s cooled (it’s also delicious served cold for breakfast or as a snack the next day).
