Monday Meals: American Cook’s New York Buffalo Wings

The fourth of July may have been and gone but that doesn’t mean we can’t learn a thing or to from the kitchen of our American friends. This week’s Monday Meal is brought to you by Liberty Vittert aka the American Cook. She’s got her own show, Liberty’s Great American Cookbook with STV, a PhD and her own blog at theamericancook.com but she’s taken time out her busy schedule to give us this delicious recipe. In 2008, at the Wing Bowl, Joey Chestnut ate 241 wings in two, 14 minute periods. If the wings were made using this recipe, I think I could beat him. It is just plainly and simply, the best recipe I have ever tried (not to toot my own horn). A bit of heat, a bit of sweet, a lot of juiciness, and just the right crispiness that let’s you feel like its got a bit of a bite, this recipe is the bee’s knees.

Every American knows that a sports bar is made great by 3 things: simple beer on tap, a massive TV on the wall, and BBQ chicken on the menu. So, buck off that weekend hangover, belly up to the plate, and turn your place into a bonafide wing joint. They can be a little intimidating to make at first, but I promise you, they are as easy as the pie.

P.S. Never fear, we live in the UK, sunlight is hard to come by…. swap the barbecue time for sticking it under the grill

Ingredients (serves 4)

10 bone in chicken pieces (thigh, wing, breast, etc.)

for the rub:

2 tsp smoked paprika

2 tsp kosher salt

2 tsp black pepper

for the sauce:

20ml bourbon

1 cans cola

1 jars blueberry preserves

80g English mustard

30g honey

3 tbs soy sauce

2 tbs cider vinegar

1 tbs hot sauce

1 tbs Worchestshire sauce

Method:
  1. Mix all rub ingredients in a bowl. Rub over chicken in a large oven baking pan. Cover with aluminum foil
  2. Bake chicken for 1 hour at 180 degrees C.
  3. Pour cola into a sauce pan and let simmer for 1 hour until reduced by half.
  4. Add all other ingredients and gently simmer for about 1 more hour.
  5. Remove chicken from oven, slather with sauce, and put under the grill for about 4 minutes each side until browned.
